Turkey Burgers with Slaw

First, heat the oven to 400°F. In a bowl, blend well the three tablespoons of lime juice, a pinch of kosher salt and pepper, and one tablespoon of red wine vinegar, whisk it slowly until all ingredients are mixed well. 

Combine slices of apple, 8 oz. savoy cabbage, and the thinly sliced jalapeno. Toss infrequently to coat. Set aside. Spread the four cups of sweet potato chip evenly on a large rimmed baking sheet. 


Bake the potato chips for about 5 minutes. Then, toss with one teaspoon of smoked paprika. Afterward, blend the 1/2 cup of mayonnaise, one tablespoon of fresh lemon juice, and one tablespoon of Sriracha with a whisk in a small bowl.

Final Steps

Prepare another a large bowl to whisk the one tablespoon of low-sodium soy sauce along with the 1 1/2 tablespoons of chili paste and one tablespoon of grated ginger. Stir the finely chopped onion. Then, combine the 1 lb. ground turkey. Mix it well. Form into 3/4 inch thick patties.

Medium heat the two tablespoons in a cast-iron skillet. Wait for 4 to 5 minutes per side. If you choose to grill the burgers, wait for 7 to 8 minutes per side. Put a Sriracha mayonnaise at the top of the lightly toasted of buns. 

Orange and Maple Glazed Turkey

Preheat the oven to 350 degrees Fahrenheit. Grease the roasting pan with cooking oil. Stir together the butter, thyme, and sage in a small bowl. Place the turkey into the prepared roasting pan and separate the breast’s skin through the neck cavity. 

Spread the butter mixture evenly over the breast, then press the skin back down on top of the butter. Brush the turkey’s outside with olive oil, then sprinkle the whole skin with the salt and pepper mixture.

Whisk together the orange juice, maple syrup, and half of the chicken broth, and set aside. Bake the turkey in the preheated oven until no longer pink at the bone and the juices run clear for about 3 hours.

Baste every 30 minutes with the maple syrup mixture. Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

Once the turkey has rested, remove it from the roasting pan, and place it onto a serving platter. Place the roasting pan onto the stove, and stir in the remaining chicken broth along with the vermouth. 

Bring to a simmer over medium-high heat. Mix gently to dissolve the brown bits, then simmer over medium-low heat until the gravy thickens, about 10 minutes total.

Begin to heat the oven to 375°F. Cut three circles that measure four 1/4-inch in each four flour tortillas. Every circle tortillas must place in each cup of the muffin tin and press to form a bowl. Bake 8 to 10 minutes to crisp.

Heat the oil in a skillet, then add the carrots. Stir for 2 minutes. Combine the turkey. While cooking for 5 to 7 minutes, cut the turkey using the spoon. 

Mix with one tablespoon of paprika, one teaspoon of garlic powder, ground two teaspoon cumin, a pinch of kosher salt, and ground pepper for 1 minute.
